Carrot-Ginger Dressing

Makes about 1 ½ cups, use a blender

Suggested pairings: diced avocado or cucumber, shredded cabbage

⅓ cup Udo’s Oil Blend
1 medium carrot, roughly chopped
¼ medium yellow onion, roughly chopped
1½ tsp. fresh ginger, finely grated
¼ cup rice vinegar
⅛ cup soy sauce
1 tsp. fresh turmeric root, finely grated (opt.)
Pinch of sea salt & freshly ground pepper, to taste
