Pasta with Fresh Tomato & Basil

Makes four 1⅓ cup servings A simple dish that can be varied according to your own taste. Just add lean turkey, chicken, or beans to create a high-protein meal. Ingredients: 8 oz. dry pasta 2 ½ cups fresh ripe tomatoes, diced ¼ cup tomato juice 1 clove garlic, minced ½ tsp. salt ¼ cup fresh basil leaves ¼ cup parmesan cheese, grated ¼ cup Udo’s Oil Blend Salt & pepper to taste Instructions: 1. Cook pasta according to package instructions. Keep cooked pasta warm. 2. To make sauce: in a large pan, add tomatoes, juice, garlic, and salt. Cover and simmer until tomatoes are softened. 3. Remove from heat. Add basil and Udo’s Oil Blend; toss with warm pasta. 4. Season to taste. Sprinkle with parmesan cheese.
